I. Introduction In recent years there has been a comprehensive revision of European food hygiene law. This development was triggered by a number of past scandals (BSE, dioxin) and by the recommendations of the White Paper on Food Safety. The objectives of the revision included an improvement in food safety and hence in the protection of consumers, an effective unification of hygiene standards in the EU, a strengthening of the trust placed in the food
